The Wittmann Estate Riesling Trocken is harvested by hand from estate-owned vineyards around the village of Westhofen. It is fermented with native yeasts and matured in large, neutral oak casks.
The wine shows a deep, stony aroma, with an elegant structure and bright citrus juice that leads to a lingering, piquant finish. All of the Wittmann estate’s vineyards are Certified Organic by Naturland, a German certification organization for Organic Agriculture. The vineyards have also been certified Biodynamic by Respekt Wine, an organization based in Austria. If your expectation of Riesling is that it will always be sweet, think again. This wine is bone dry, and is produced by one of the best practitioners of the style . . .
